Gluten Free Orange Sesame Pork

I love the flavor of Asian food.
But I don't like that it's usually heavily battered in a gluten containing recipe, deep-fried with other gluten  ingredients then smothered in gluten-full soy sauce.
So the solution?
Find a GF chinese place, which there are some
or the easier and cheaper route
make it at home!

This orange chicken is not very sweet but really really tasty and easy.
Next time I make this, for presentation and for ease of eating, I'm going to cut the orange wedges into chunks.


Gluten Free Orange Sesame Pork

1 orange
1/2 lb pork roast or pork tenderloin
2 T. soy sauce
1 T. sugar
2 T. orange juice
1/4 t. pepper 
1/4 cup cornstarch or arrowroot flour
Canola oil
2 T. soy sauce
1/2 c. orange juice
2 T. marmalade jam
1 T. sesame seeds
Cooked brown rice

Peel and slice orange.  Set aside.
Slice pork into bite size pieces.  
In a dish combine 2 T. soy sauce, sugar, 2 T. orange juice and pepper.  Add pork and coat.  Allow to marinate for 15 minutes.  
Put cornstarch in a small bowl.  Drain marinade and coat pork with cornstarch.
Heat oil in a pan.  If you are deep frying pork you will need 2 C of oil.  I just drizzled some oil into the pan. 
Cook pork until cooked and golden.  Remove most of the oil from the pan.  Add 2 T. soy sauce, 1/2 cup orange juice, and marmalade.  Heat and stir until bubbly.  Stir in pork.  Stir to coat.  Serve over brown rice and oranges.  Sprinkle with sesame seeds.

Gluten Free Pork Chops Baked with Apple and Yams

This is a really easy dinner.
The original recipe called for apples, but when I made it the first time I was all out.  So I substituted in a pear instead, and in all honesty, we liked it better than the next time I made it with an apple.  But either way it's easy and good.
This recipe is for 1 packet.  Double/triple/quadruple for your own needs.

Gluten Free Pork Chops Baked with Apple and Yams

1 pork chop
1/2 yam
1/2 medium apple or pear

Preheat oven to 350.
Slice the yam thinly.  Quarter, core and slice the apple or pear into eight pieces.  
On a large piece of foil, layer yam slices, pork chop and then apple/pear slices.  Sprinkle each layer with salt, pepper, and cinnamon.
Wrap the packet well and bake 40 minutes.

Island Pork Tenderloin

This pork is really good.
The salad is ok.
I think that I'll use the pork for tacos, over rice, or something other than salad.
If you want to make the salad, it's just spinach, raisins, red pepper, and your favorite salad dressing.
The pork recipe comes from the BeachBody cookbook for P90X.


Island Pork Tenderloin

16 oz pork tenderloin
1/2 t. salt
1/4 t. pepper
1/2 t. chile powder
1/2 t. cumin
1/2 t. cinnamon
1 T. olive oil
1/4 cup brown sugar
3-4 garlic cloves, minced
1/2 T. Tabasco sauce

Stir together salt, pepper, cumin, chile powder, and cinnamon, then rub into the pork.  (Don't be afraid to use your hands here).

Heat the oil in a skillet over moderately high heat and brown pork for about 4 minutes on each side.
Stir together brown sugar, garlic, and Tabasco sauce and pat onto top of the tenderloin.  

Place in crockpot and cook until tender.  Or cook in a 350 degree oven for 20 minutes.
(If using the crockpot, pour in a little water about 1/4 of the way up the pork.  Pour the water down the side of the crockpot so the rub and sauce don't run off the meat.)

Sweet and Savory Pork Sandwiches

I got this recipe from my sister-in-law from Houston.
If you are craving real Texas barbeque, look no further.
This is a really easy, really tasty recipe.

You can use a 2 1/2 lb boneless pork loin roast and shed the meat when cooked or 2 1/2 lbs of boneless country-style pork ribs. Whichever you prefer. I used the roast and made sandwiches. I'm sure the ribs are really tasty as well.
I used a Kinnickinik GF Hamburger Bun and toasted it so it wouldn't get soggy so fast.
Use your favorite b-b-que sauce, I used Bulls-eye Original (yes, it's GF).
Use however much meat you want. I only made half the recipe, just adjust the recipe according to your needs.
Sweet and Savory Ribs/Sandwiches

1 lg. onion, sliced and separated into rings
2 1/2 lbs boneless country style pork ribs, or a 2 1/2 lbs boneless pork loin roast.
1 bottle (18oz) barbeque sauce
1/4 c. spicy brown mustard or honey mustard
1/2 c. maple syrup
1 t. garlic salt
1/2 t. pepper

Place onion in the bottom of your crockpot. Top with meat. Combine the remaining ingredients and pour over ribs. Cover and cook on low for 8-9 hours or until meat is tender.

Tangy Barbeque-Sauced Pork Chops

Camera battery died.
Starving and the aroma was so good.
Had to sink my teeth in at that moment.
Sorry.

These pork chops are easy-peasy. The recipe is from the Taste of Home- Healthy Cooking and they say that you can serve the sauce with chicken instead of pork if you wish. There is some heat to this!
Serve with mashed potatoes to soak up all the sauce!

Tangy Barbecue-Sauced Pork Chops

1/2 medium onion, chopped
1/2 cup water
2 1/2 T. cider vinegar (add 1/2 T. more if you want it more tangy/vinegar-y)
2 T. sugar
1 T. prepared mustard
1 lemon slice
1/4 t. salt
1/4 t. pepper
1/8 t. crushed red pepper flakes
1/2 cup ketchup
2 T. Worcestershire sauce
3-5 boneless pork chops
1 T. canola oil

In a small sauce pan, combines the first 9 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. Stir in ketchup, Worcestershire sauce. Heat through and discard lemon.

Meanwhile, in a large skillet, brown pork chops in oil for 5 minutes on each side. Transfer to a baking dish, coated with cooking spray; pour sauce over chops.

Cover and bake at 350 for 25-30 minutes or until a meat thermometer reads 160.

Barbeque Pork Sandwiches

This recipe couldn't be easier! Just spray your crockpot with cooking spray and dump all the ingredients in, easy-peasy and clean up's a cinch!
I like to use Kinnikinnick Hamburger Burger Buns. If you have found a better bun, let me know!

Barbeque Pork Sandwiches

1 lb pork tenderloin
1 cup ketchup
2 1/2 T. brown sugar
2 1/2 T. cider vinegar
1 1/2 T. Worcestershire sauce
1 T. mustard (you can use a spicy mustard if preferred)
1/4 t. pepper
4 hamburger buns

Add all ingredients to the crockpot. Cook on low for 5-6 hours or until done. Shred meat with two forks. Cook for 1 more hour. Serve on the buns.

Skewerless Kabobs

So easy and the possibilities are endless. Just add any vegetable you like to have on a kabob, if you don't like the ones listed.
My husband said this was the best pork I have ever made. I'll take the compliment.
This dinner actually reminded me of the Kabobs at Olive Garden.
Yes, Olive Garden does have a GF menu! It's small, but it's better than nothing.
This came together really fast, and I just served the pork and veggies over hot brown rice.

Skewerless Kabobs

3/4 lb- 1 lb pork tenderloin, cut into 1 inch cubes
3/4 cup Italian salad dressing, divided
1 green pepper, cut into 1 inch cubes
2 small zucchinis, cut into 1/2 in slices (I cut these on the diagonal.)
3 mushrooms, thickly sliced
1/2 sweet onion, cut into wedges
1 roma tomato, cut into cubes
1/4 t. pepper
1/8 t. salt

In a large skillet, saute pork in 1/4 cup salad dressing until no longer pink. Remove and keep warm.
In the same pan, saute the pepper, zucchini, mushrooms, onion, tomatoes, pepper and salt in remaining salad dressing until vegetables are tender. Return pork to skillet; heat through.

CrockPot Pork Ribs

Sorry, once again no picture. I couldn't get a good one and they were gone in a flash so maybe next time. These ribs were so tender, easy to make and so, so good! It was perfect to come home from church and have dinner mostly made! The aroma is to-die-for! We used the extra sauce for dipping and as a "gravy" for the side of mashed potatoes! Yum!

CrockPot Pork Ribs

1.5 lbs country-style boneless pork ribs
1/2 cup ketchup
1/2 cup barbeque sauce
2 T. brown sugar
2 T. worcestershire sauce
1/2 T. balsamic vinegar
1/2 T. molasses
1 garlic clove, minced
1 T. dried minced onion
1/2-1 t. Cajun seasoning (the more you use, the more "zip" the sauce will have)
1/2 t. ground mustard
1/4 t. salt
1/4 t. pepper

Coat crockpot with cooking spray. Place ribs in crockpot. Combine the remaining ingredients; pour over ribs. Cover and cook on low for 6-8 hours or until meat is tender.

Parmesan Sauce Pork Chops

I did not get a good picture of these tasty easy pork chops.
Just use your imagination....
on the serving plate there is a layer of deliciously cooked in butter pork chops,
then a lovely parmesan cheese sauce over the top.
Sounds delicious right.

Parmesan Sauced Pork Chops

4 boneless pork chops (I like the thin cut, they could fast and very evenly)
1/2 t. salt
1/4 t. pepper
1 T. butter
1 T. cornstarch
1 cup skim milk
1/3 cup grated parmesan cheese
2 T. grated onion
1/4 t. dried thyme
1/4 t. dried nutmeg

Sprinkle pork chops with salt and pepper. In a large nonstick skillet coated with cooking spray, cook chops in butter over med. heat until meat juices run clear; remove and keep warm.

Combine cornstarch and milk until smooth; stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in remaining ingredients; heat through.

Pour over the pork chops and serve. I served with a green salad and potatoes.

Applesauce-Glazed Pork Chops

These chops have a sweet barbeque flavor to them.
This is a quick dinner. We had them with Rosemary Mashed Potatoes and green peas.

Applesauce-Glazed Pork Chops

4 boneless pork chops
1 cups applesauce
1/4 cup packed brown sugar
1 T. barbecue sauce
1 T. worcestershire sauce
1 garlic clove, minced
1/2 t. salt
1/2 t. pepper

Place pork chops in an 8x8 baking dish sprayed with cooking spray. In a small bowl, combine the remaining ingredients; spoon over chops.
Bake, uncovered, at 350 for 20-25 minutes or until done.

Sweet Pork Burritos

If you like your burrito more sweet than spicy this is the recipe for you!

Remember to cook your corn tortilla in a frying pan for about 1 minute on each side just to brown. It makes the tortilla much more paletable!

Sweet Pork
{supposedly this is the Cafe Rio recipe}

3-4 lb. pork roast
16 oz. salsa, your favorite
1 can Coke, or diet Sprite
2 cups brown sugar

Put roast in crockpot and fill 1/2 ways with water. Cook on high for 5 hours. Drain 3/4 of the liquid. Cool pork slightly. Shred and put back in crockpot. Puree salsa, stir in brown sugar and coke then pour over shredded pork. Cook for 2-3 more hours.

Delicious with all your fav burrito toppings!
