Gluten Free Marshmallow Popcorn

When I was in college, many years ago I had a roommate.
This roommate was a culinary arts major.
She did not cook at home.
Bummer right.
But I did like to pick her brain for some good recipes.
Marshmallow popcorn was one of those.
We made this and watched "Singing in the Rain" with another apt. of girls.
So fun.
I make this sweet, sticky popcorn for my family now.  We usually aren't watching "Singing in the Rain", it's "How to Train Your Dragon", "Tangled" or "Toy Story" but the popcorn is still as good as ever.


Gluten Free Marshmallow Popcorn

4 qts. popcorn (this is about 3/4 to 1 cup of unpopped kernels)
3 cups mini marshmallows (or tear the big ones in half)
1 cup butter
1 1/2 cups sugar
1/4 t. salt
1/2 cup corn syrup

Stir together the popped popcorn and marshmallows.  
In a saucepan melt butter, add sugar, salt and corn syrup.  Bring to a boil for 2.5  minutes and pour over popcorn/marshmallows until evenly coated.
Let cool for a few minutes and enjoy.
The marshmallows will melt and become really sticky and sweet.  Watch out for burned tongues and fingers.

Gluten Free Holiday Popcorn

I know that it's not the holidays yet,
but I don't know why this recipe is called Holiday Popcorn because it is good all the time, not just at Holiday time!

So make up a batch of this sweet, crunchy popcorn mix and enjoy!
And it makes a ton so I really hope you like it.

Gluten Free Holiday Popcorn

5-6 quarts popped corn (this is about 1 1/4 cups of kernals)
1 1/3 cups chopped pecans
2/3 cups chopped almonds
1/3 cup shredded coconut
1/3 cup dried cranberries
1/2 cup corn syrup
1 1/3 cup sugar
1 cup butter
1 t vanilla

Mix the popped corn, nuts, coconut and cranberries in a large bowl.  
In a saucepan over medium heat, bring to a boil the corn syrup, sugar, and butter.  Stir constantly to avoid scorching.  Remove from heat and stir in vanilla.  
Pour over popcorn and let dry.  Break and store in an airtight container.

Gluten Free Caramel Popcorn

A neighbor in college would make this popcorn and I fell head-over-heals in love with it.
This is the best caramel popcorn you will ever eat.
Well...only the best if you love gooey, sticky, eat-with-a-fork type caramel popcorn.
But who in their right mind doesn't?
The best part or should I say parts about this popcorn are it makes a HUGE bowl and it takes only 4 simple ingredients.

Gluten Free Caramel Popcorn

1 cup light corn syrup
2/3 cup brown sugar
1 can sweetened condensed milk (not evaporated, it will not work)
1 cup butter

Get the biggest serving bowl you have (not joking) and fill it full of popped popcorn.  Set aside.
Stir together corn syrup and brown sugar, bring to a boil.
Add milk and butter.  When butter is melted pour over popcorn and stir to coat.

You might have to eat this with a fork.

White Chocolate Popcorn Deluxe

Looks like ordinary popcorn right? Wrong.
It's amazing!

White Chocolate Popcorn Deluxe

8 cups air-popped popcorn
2 oz. white baking chocolate
1 t. butter
1/3 cup dried cranberries
1/4 cup chopped walnuts
3/4 t. salt

Place popcorn in a large bowl. In a microwave, melt white chocolate and butter; stir until smooth. Pour over popcorn mixture and toss to coat. Add the cranberries, nuts, and salt.
Spread onto waxed paper. Cool until set. Store in a airtight container.
