Gluten Free Pot Roast

This is a great busy day dinner.
Put in the crockpot and enjoy that evening.
The rootbeer gives a really nice buttery flavor to the meat.  

Gluten Free Pot Roast

2.5 lb roast
salt and pepper to taste
3 carrots, peels and cut into chunks
Olive oil
18 oz. rootbeer, room temperature (A&W rootbeer is gluten free)
1 onion, cut into chunks
2 potatoes, peeled and cut into chunks

Season roast on all sides with salt and pepper.  Set aside for while you cut the carrots, onion, and potatoes.
Heat a frying pan and add a drizzle of olive oil.  Brown roast on all sides.  This is to get a nice caramelized crispness to the meat.  
Pour 1/3 of the rootbeer into your crockpot.  Add the meat carefully.  Add the carrots, onion, and potatoes.  
Pour the remaining rootbeer carefully and cook on low for 6-8 hours or until meat is done.

Gluten Free Lime Chicken Tacos

Lime.
Yum.
You know it's going to be good if there's lime somewhere in the title.
The chicken is really easy, especially if you use your crockpot.
The ingredients are not what you expect, but come together really nicely.
I found the recipe on allrecipes.com

Gluten Free Lime Chicken Tacos

2-3 chicken breasts
2 T. red wine vinegar
1/2 lime, juiced
1 t. sugar
1/2 t. salt
1/2 t. pepper
2 green onions 
2 garlic cloves, minced
1 t. dried oregano

Saute chicken in a medium saucepan over medium-high heat for about 20 minutes.  Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano.  Simmer for an extra 10 minutes.  Cut into cubes.

Or put chicken breasts in crockpot and add remaining ingredients.  Cook on low until chicken is cooked.  Shred chicken or cut into cubes.

Serve chicken with your favorite taco toppings:
corn tortillas
tomato
lettuce
shredded cheese
salsa 
sour cream
guacamole

Gluten Free Crockpot Lasagna

This lasagna is ridiculously good and easy.
Thank goodness for crockpots right!

I found the full recipe was too much for my little family (and crockpot) to handle so I made the sauce and split it in half.  Grated the cheese split in half.  Put both of the "leftovers" (cheeses and sauce) into separate baggies and then into a large bag labeled "Lasagna" and had another meal waiting in the freezer for another day.  I didn't freeze the cottage/ricotta cheese or the noodles.

I used the DeBoles brand Lasagna noodles and they worked really well.  Since they "no-cook" it cuts the down the prep time.  If you use cottage cheese only cook the lasagna for 3-3.5 hours otherwise the noodles will get really mushy.  If using ricotta cheese, cook for the 4-5 hours.  The lasagna is done when the noodles are pierced easily with a fork.

Gluten Free Crock Pot Lasagna

1/2 lb ground beef
1/2 lb sausage
(or 1 lb of either meat)
1/2 onion, chopped
1 cloves garlic, minced
1 can (29 oz) tomato sauce
1 cup water
1 can (6 oz) tomato paste
1 t. dried oregano
8 oz package Gluten Free Lasagna noodles
4 cups shredded mozzarella cheese
1 1/2 cups ricotta cheese or cottage cheese
1/2 cup grated Parmesan cheese
1 t. salt

In a skillet, cook meat, onion, and garlic over medium heat until meat is no longer pink; drain.  Add the tomato sauce, water, tomato paste, salt and oregano; mix well. 
(If freezing, put sauce into containers or baggies.  When ready to use, defrost and continue with the next step)
Spread 1/4 of the meat sauce in an ungreased 5-quart slow cooker.  Arrange 1/3 of the noodles over sauce (breaking noodles if necessary).  Combines the cheeses and then spoon 1/3 of the mixture over noodles.  Repeat layers twice.  Top with remaining meat sauce.  Cover and cook on low for 4-5 hours (shorter time if using cottage cheese) or until noodles are tender.

Island Pork Tenderloin

This pork is really good.
The salad is ok.
I think that I'll use the pork for tacos, over rice, or something other than salad.
If you want to make the salad, it's just spinach, raisins, red pepper, and your favorite salad dressing.
The pork recipe comes from the BeachBody cookbook for P90X.


Island Pork Tenderloin

16 oz pork tenderloin
1/2 t. salt
1/4 t. pepper
1/2 t. chile powder
1/2 t. cumin
1/2 t. cinnamon
1 T. olive oil
1/4 cup brown sugar
3-4 garlic cloves, minced
1/2 T. Tabasco sauce

Stir together salt, pepper, cumin, chile powder, and cinnamon, then rub into the pork.  (Don't be afraid to use your hands here).

Heat the oil in a skillet over moderately high heat and brown pork for about 4 minutes on each side.
Stir together brown sugar, garlic, and Tabasco sauce and pat onto top of the tenderloin.  

Place in crockpot and cook until tender.  Or cook in a 350 degree oven for 20 minutes.
(If using the crockpot, pour in a little water about 1/4 of the way up the pork.  Pour the water down the side of the crockpot so the rub and sauce don't run off the meat.)

Sweet and Savory Pork Sandwiches

I got this recipe from my sister-in-law from Houston.
If you are craving real Texas barbeque, look no further.
This is a really easy, really tasty recipe.

You can use a 2 1/2 lb boneless pork loin roast and shed the meat when cooked or 2 1/2 lbs of boneless country-style pork ribs. Whichever you prefer. I used the roast and made sandwiches. I'm sure the ribs are really tasty as well.
I used a Kinnickinik GF Hamburger Bun and toasted it so it wouldn't get soggy so fast.
Use your favorite b-b-que sauce, I used Bulls-eye Original (yes, it's GF).
Use however much meat you want. I only made half the recipe, just adjust the recipe according to your needs.
Sweet and Savory Ribs/Sandwiches

1 lg. onion, sliced and separated into rings
2 1/2 lbs boneless country style pork ribs, or a 2 1/2 lbs boneless pork loin roast.
1 bottle (18oz) barbeque sauce
1/4 c. spicy brown mustard or honey mustard
1/2 c. maple syrup
1 t. garlic salt
1/2 t. pepper

Place onion in the bottom of your crockpot. Top with meat. Combine the remaining ingredients and pour over ribs. Cover and cook on low for 8-9 hours or until meat is tender.

Italian Chicken

I had to make this chicken for dinner last night.
I had to.
I was craving pasta and something non-low caloric.
This recipe covers both.
It's ultimate comfort food.
It's so good, you can rationalize by using low fat cream cheese.
Hope you enjoy it as much as we did!

Italian Chicken

2 chicken breasts
1 T. butter
1 packet dry Italian salad dressing mix

Spray crockpot with cooking spray. Place chicken in the crockpot and cut dabs of butter over the chicken. Sprinkle the salad dressing mix.
Cook on low for 6-8 hours or until chicken is cooked. (If chicken is browning too quickly, pour a little water into the bottom.)

When chicken is cooked, remove from crockpot and shred. Put aside.

Make the sauce by mixing together and bring to a boil:
1 brick cream cheese
1/2 cup liquid from the crockpot or 1/2 cup milk (I prefer the drippings)
1 recipe GF soup mix (or for you non-GF eaters, 1 can cream of chicken soup)

When thick and boiling, add in frozen green peas to your liking and the chicken. Heat throughly and serve over your favorite type of GF noodles.

Spiced Cran-Apple Roast

We had a really good roast tonight for dinner.
It had a fall flavor.
Paul gave it the "thumbs-up" sign.
It's a good change up from the usual Sunday roast, and so easy. You just dump everything in your crockpot and when you get home from church, dig in!

Spiced Cran-Apple Roast

1 roast, 2-3 lbs
1/2 cup apple butter (it's but the jam or the peanut butter, depending on which store)
1/4 cup apple juice
2 T. cider vinegar
1 t. ground pepper
1/2 t. salt
1 medium Granny Smith apple, peeled and cubed
1 celery rib, chopped
1 small red onion, chopped
1/3 cup dried cranberries
2 garlic cloves, minced
1 T. cornstarch
3 T. cold water

Coat crockpot with cooking spray. Place roast in crock pot.
In a large bowl, combine the apple butter, juice, vinegar, pepper and salt. Stir in the apple, celery, onion, cranberries, and garlic. Pour over roast. Cover and cook on low for 6-8 hours or until meat is tender.
Remove meat to a serving platter; keep warm. Transfer juices to a small saucepan. Bring to a boil. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Served with meat.

Barbeque Pork Sandwiches

This recipe couldn't be easier! Just spray your crockpot with cooking spray and dump all the ingredients in, easy-peasy and clean up's a cinch!
I like to use Kinnikinnick Hamburger Burger Buns. If you have found a better bun, let me know!

Barbeque Pork Sandwiches

1 lb pork tenderloin
1 cup ketchup
2 1/2 T. brown sugar
2 1/2 T. cider vinegar
1 1/2 T. Worcestershire sauce
1 T. mustard (you can use a spicy mustard if preferred)
1/4 t. pepper
4 hamburger buns

Add all ingredients to the crockpot. Cook on low for 5-6 hours or until done. Shred meat with two forks. Cook for 1 more hour. Serve on the buns.

CrockPot Pork Ribs

Sorry, once again no picture. I couldn't get a good one and they were gone in a flash so maybe next time. These ribs were so tender, easy to make and so, so good! It was perfect to come home from church and have dinner mostly made! The aroma is to-die-for! We used the extra sauce for dipping and as a "gravy" for the side of mashed potatoes! Yum!

CrockPot Pork Ribs

1.5 lbs country-style boneless pork ribs
1/2 cup ketchup
1/2 cup barbeque sauce
2 T. brown sugar
2 T. worcestershire sauce
1/2 T. balsamic vinegar
1/2 T. molasses
1 garlic clove, minced
1 T. dried minced onion
1/2-1 t. Cajun seasoning (the more you use, the more "zip" the sauce will have)
1/2 t. ground mustard
1/4 t. salt
1/4 t. pepper

Coat crockpot with cooking spray. Place ribs in crockpot. Combine the remaining ingredients; pour over ribs. Cover and cook on low for 6-8 hours or until meat is tender.

Company Chicken

This is also known as cheesy chicken.
Not only is this easy it has lots of flavor that isn't too strong so it's perfect for any palate.
I like to serve the chicken over mashed potatoes so the chicken forms a gravy, but the recipe says you can serve over rice or noodles as well.
Company Chicken

2-3 chicken breasts
1/2 cup mayonnaise
1/2 cup sour cream
2 t. lemon juice
3/4 cup cheddar cheese (I've tried other flavors, but cheddar is by far the best)

Place chicken in crockpot, sprinkle with salt, pepper, and paprika. Pour the other ingredients over the chicken. Cook on low heat for 6-8 hours or high for 4-6 hours. Shred chicken when done, and let cook for 30 more minutes.
Serve on top of mashed potatoes, rice, or noodles.

Salsa Chicken

This is the easiest recipe of all time.
And it's dang good.
Salsa Chicken

2-3 chicken breasts
Jar of your favorite salsa
Corn tortillas
Taco toppings: cheese, sour cream, avocado, etc. etc.

Place chicken breasts in bottom of your crockpot. (You can even put them in frozen! Just adjust the cooking time a little longer).
Pour salsa over the top of the chicken.
Cook on low for 6-8 hours.
Cook corn tortillas in a skillet over medium heat, turning every 20-30 seconds, or when golden brown and soft.
Shred chicken when finished cooking.
Make your delicious tacos and enjoy an easy night!

Southwestern Soup

This is a good spicy soup with a thick sauce, no wimpy broth here.
It's ready in 30 minutes or you can make it ahead of time and put in the crockpot to simmer all day.
Southwestern Soup

1 1/2 cups water
2 (8oz each) cans tomato sauce
1 can kidney beans, rinsed and drained
1 can (14.5 oz) chicken or vegetable broth
1 cup frozen corn
1 cup salsa (this will determine the spicy heat!)
1 t. dried minced onions
1 t. dried oregano
1 t. dried basil
Toppings: shredded cheddar cheese, tortilla chips

Combine the ingredients, and bring to a boil. Reduce heat; simmer, uncovered for 15-20 minutes or until heated through.
Serve sprinkled with cheese and chips.

If you don't have any store bought chips on hand, it's easy to make tortilla chips.
Using corn tortillas, spray front and back with cooking spray. Sprinkle with lime juice and salt. Cut with a pizza cutter into wedges or slices. Bake on a cookie sheet for 7 minutes, turn over and bake for 5 more minutes or until lightly browned.

Sweet Pork Burritos

If you like your burrito more sweet than spicy this is the recipe for you!

Remember to cook your corn tortilla in a frying pan for about 1 minute on each side just to brown. It makes the tortilla much more paletable!

Sweet Pork
{supposedly this is the Cafe Rio recipe}

3-4 lb. pork roast
16 oz. salsa, your favorite
1 can Coke, or diet Sprite
2 cups brown sugar

Put roast in crockpot and fill 1/2 ways with water. Cook on high for 5 hours. Drain 3/4 of the liquid. Cool pork slightly. Shred and put back in crockpot. Puree salsa, stir in brown sugar and coke then pour over shredded pork. Cook for 2-3 more hours.

Delicious with all your fav burrito toppings!

Apricot Chicken

This is my favorite, favorite dinner!
It's so easy, thanks to the help of a crockpot (slow cooker) and the aroma is so good.

Apricot Chicken

2-3 chicken breasts (depends on how hungry you are)
1 cup Catalina dressing
1 cup apricot jam/preserves
1 packet onion soup mix

Spray crockpot with cooking spray. Place chicken breasts in the crockpot. Add the dressing, jam, and soup mix. Cook on low for 6-8 hours, or high for 4-6 hours. When cooked, shred chicken and serve over white rice.

*Oven method: Place chicken breasts in a greased 9x13 pan. Pour dressing, jam, and soup mix over chicken and bake at 350 for 1 hour. Shred or cut into cubes and serve over rice.

Serve with a side of corn.
